Ingredients
• 2–3 lbs potatoes
• 4 tbsp butter
• 1/2 to 1 cup milk (or heavy cream)
• Salt and pepper
Steps
1) Cut potatoes into chunks.
2) Boil in salted water until fork-tender (15–20 minutes).
3) Drain well.
4) Mash, then add butter and milk until smooth.
5) Season with salt and pepper.
Tip: Warm the milk first so the potatoes don’t cool down.
